Mint Cucumber Drink

If you're looking for a refreshing drink recipe for hot summer days, try this Summer Mint & Cucumber Cooler. In Chinese medicine, mint (also known as Bo He), is considered a cooling herb that helps remove excess heat from the body, particularly from the head. Cucumber and mint both support the Liver which in Chinese medicine benefit the eyes. If summer is causing itchy eyes for you, this drink may provide some relief.

Ingredients:

  • 2 Large handfuls of fresh mint
  • 1/2 peeled cucumber thinly sliced
  • Large pitcher of water

Instructions:

Wash the mint thoroughly. Bring a large pot of water to a boil, then add the cleaned mint leaves. Remove from heat so the mint can steep. Allow the water to cool to room temperature (at least 7-10 minutes). Meanwhile, cut the cucumber into thin slices and add to your pitcher. Using a wooden spoon, crush the cucumbers a bit to release the flavor. Now pour the cooled mint water into the pitcher over the cucumbers while using a colander to remove the largest leaves and pieces. Sweeten to taste - we recommend natural sweeteners like monk fruit or stevia. Serve over ice with a fresh sprig of mint for garnish and enjoy!
